Eggplant Omelette with Beef and Veggies (Tortang Talong)
Today is a holiday!
I want to rest and just stay relaxed for the whole day so I think the recipe I am going to cook would be special and I have to take my sweet time preparing and cooking my Eggplant Omelette with Beef and Veggies or we may call this simply in Tagalog as Tortang Talong. This dish is one of my special recipes. There are a lot of variations in cooking Tortang Talong, you may replace the ground beef with minced pork, or you may add cheese as well, or you may simply add scrambled egg into it.
The best eggplant to use for Tortang Talong is the smaller size which is easy to boil or roast, and is also easier to flip it to the other side as you can just hold the crown or head of the eggplant. The seeds are smaller as well compared to bigger ones. One more thing in choosing good eggplant is when you press the body, it should be soft and the skin really purple.
The ones we used here are three large eggplants, so I cut them into halves as they’re so big to put in my pot. I removed all of the seeds. Around here, I seldom see small size eggplant, sometimes there is but when you press the body, it’s hard, so it’s not a good choice.
To add flavour to your Tortang Talong, you may also add sauce like fish sauce (patis) and lime (calamansi). So here it is.
