Homemade Shrimp Paste
This shrimp paste or in Tagalog is called as Bagoong Alamang usually uses as side-dish for any viand, especially paired for Kare-Kare. This can be bought in ready-made bottled or in raw bottled and can found at Lucky Plaza or any Filipino store in Singapore. The raw of this can use to mix in cooking Pinakbet, pork binagoongan and many other dishes.
I prefer to cook this on my own version as I can control the saltiness or sweetness of the shrimp paste, you may prefer to add chili as well. This is really delicious to include to your meal however it is recommended to consume it in moderation.
My version of cooking this homemade shrimp paste has sugar, vinegar and a lot of onion slices to neutralize the saltiness and taste a little bit sweet. Cook in low heat and a bit longer as I want it to be fully cooked and the shrimp paste is dried cooked that the oil is on top.
