Sambal Ikan Bilis is a hot and spicy condiment that gives flavor to the food. It can also use as side-dish in a viand or mix with the food.
This recipe was shared to me by one of my Malaysian officemates. It was brought out when we’ve talked about how to cook Sambal Petai Ikan Bilis as sambal is one of the important ingredients of that dish.
This Sambal Ikan Bilis can also use as a filling spread in a sandwich.
This can also use to mix in varieties of stir-fried vegetables, fish and meat as it adds flavor with your dish.
Here in Singapore, Sambal Ikan Bilis is very famous as they include it as a side dish to Nasi Lemak.
I’ve learned to eat this condiment during the time we stayed in Kuala Lumpur Malaysia, most of the ready-made foods on food stalls are hot and spicy. At first, it was really hard to swallow but as time goes by you will get to use eating it and later on can’t eat without chili on your food.
On this dish, I removed the chili seeds, more onions added to give sweetness on it. Also cook it longer until it reaches the perfect consistency, texture, and flavor and make it dry until the oil floats on the top. After cooking, let it cool down and transfer to a wide mouth container for easy access to get any time you need and store in a fridge for days or a week.
